I would love to get my hands on a manual for my 1995 Fiat Granduca N 56 if anyone can help. Hopefully someone can tell me what exactly these two switches are for.

The Red one on the left is for working the fridge on 12volt when your driving the van, the other Green one, is for working the fridge 220 volt when plugged into EHU ( electric hook up ) on a camp site or Aire
the numbered dial is to set the temperature when working either of the electrics.

The gas tempt and ignition control is normally on the opposite side.

Yes the gas temperature and ignition are there. So I assume if we are stopped with no access to mains power we keep the fridge running on the gas.
If I leave the fridge on the battery it could run it down I guess

It will only run on battery while you're driving

Your 12v supply is usually supplies from the alternator whilst the engine is running,
When you turn off the engine usually (provided all is working correct) that 12v supply to the fridge is stopped

The fridge is very common and looks very like mine so even if you don’t get the manual for the van you might get the manual or a YouTube clip on the fridge or heater or whatever you want to specifically look up. Should be a label or sticker on each appliance somewhere.
