Proper racklette is served in restaurants in France. It consists of a half round of cheese held on a spike and a hot grill held over it to melt the cheese. The melted cheese is scraped onto a plate. I’ve had it a few times and almiost overdosed on cheese. I have also seen it melted by a charcoal burner.
