We have a wee 3 tier steamer, which will give you spuds and 2 veg on one ring. Choose ingredients that can be dry fried or oil fried in a good sized frying pan, after that its all about timing.

We had a Halogen oven for when on hookup, but found a great wee oven in Lidl or Aldi last year. The wee oven has a filament top and bottom and does all thats needed. Sadly though, not much use in the middle of a forest.

I use a double skillet http://www.thedoubleskilletpancompany.com/ not cheap but one of the best things i have bought as the last 2 vans had no oven .Bought at a show near 10 years ago and still going strong, it is so easy to clean (half the time i just wipe it out with paper towels) and it does all an oven does. The original maker stopped making them a few years ago and they did 2 sizes (the one i have is a bit larger than the one listed) this new one is the small one which makes it easier to get a extra pans or kettle on the hob at the same time .I intend to purchase this smaller one as the hob on the new van is smaller than the others.

That sort of wattage will zap your batteries via investor very very quickly indeed, best using on EHU or via a genny. Gas is the really only answer for off grid or there is a sort of "oven" than can be used on a gas burner..... saw them mentioned somewhere before.
