Two regulators/controllers.

I have an MPPT regulator/controller which doesn't charge my engine battery. I also have a normal controller not being used.

Could I.......

Take extra wires from the solar feed and power two controllers? one for Leisures and one for engine battery?

No would be my first thought, the MPPT is able to adjust the voltage and current coming from the panel, two independent controllers from the same source could mess that function up. A split charge relay from the regulator output would be a better idea.

I have ONE OF THESE and it does the job of keeping the starter battery fully charged, when the sun shines.

No, no can do.
The other controller demands will interfere with the MPPT monitoring of the panels input and prevent it operating at the peak values it is programmed to monitor.
Dual controller or B2B system is the way to go.

Very easy.

Connect the black wire to earth
Connect the blue wire to a permanently live connected to the engine battery
Connect the red wire to a permanently live connected to the leisure battery

Job done.
