Was recently towed off soft grass area and found that towing eye was trapped within chassis, appears that chassis thread end has broken away from its weld. Does anyone know if you can access the chassis to clamp the end and unthread the towing eye?

To be honest, I don't know but the best option would be to remove the front bumper. It would be a pain in the ass but it would allow better access to examine the end of the chassis rail.

It’s part of the front cross member and some of them have been known to rust badly so it may be highlighting a slightly bigger issue, although they aren’t that expensive to replace

That's supposed to be a pretty strong connection to the frame, so most definitely take a closer look at the issue.
As our resident chubby controller suggested, it's probably rust that has done it.
Bumper shouldn't be that difficult to remove in fairness, just soak everything in your favorite penetrating oil before hand and let it work for a few minutes before attempting to remove any bolts and use a small ratchet or something that wont allow you to put too much torque on them or they'll snap right off (don't ask me how I know).

As Fat Controller suggests, rusted cross member most likely.
Not a 'structural' element but does support the radiator.
Dunno what year your vehicle is but in certain models there are 3 bolts each side and 3 or 4 plastic clips to move from old crossmember to new. Also a rubber support on the bottom of the radiator to slot into the new one.
