Howdy!

weighed up last night - and we've 60kg of apples in the store looking for a home - so we're keen to get some cider made! Anyone brewed before/brew now? Cider/lager/ etc?! Hoping to be able to get some tips!!

Don’t do a cider Killiand, but do a mean all grain IPA.
Fluctuated liquid yeast makes a big difference.
Will bring a few bottles for sampling to a meet to see what you think.

The home brewing company in Mountmellick in Co Laois, has all the gear to set you up.
A brother in law of mine went brewing a few years ago, but nearly poisoned us with the results.

Malcolm - I hope to be on the better side of poisoning! between thegardenshop.ie and now possibly homebrewing, I might as well just hand my wallet over on the laois border!! :P

John I'm intrigued and wouldn't dare turn down a tasting! I think we'll be on cider for a batch - as there's notions of hot home made spiced cider at christmas from the apples in the garden... BUT definitely keen to make the most of the kit and try a few different things... practice makes perfect after all :D did you do the IPA yourself?

Killiand, I was working with McAlpine one time and a few lads fancied some coconut wine, but they had to give up as they broke their ankles trying to tread them.

If they don't already, the local enterprise board should have you on a commission.. had decided to buy from ebay after a lot of research - looks like we're now more than likely heading to mountmellick on saturday!!

Yes Killiand,
Set up a system years ago in the man shed for brewing using just the key ingredients, barley/malt/hops/water and yeast.... the all grain system using a mash tun, boiling kettle and fermenters. It’s much better than kit brewing.
I Like hoppy beer, so a good IPA with hops in the boil and dry hopped in fermentation adds a great flavour.
Only brew once every 2 or 3 months as the 50 litres gets drunk if it’s around !... I also limit it to less than 5% ABV
Brew now on for Christmas, a dry stout with cocoa husk and coffee beans for intensity. Be interesting to taste it.
Will definately bring some along so folk can sample it.

every forum seems to have different thoughts on timings, etc... so making executive decisions.. and taking notes so I can try trace where I f*(&% up if it all goes wrong! :P

With any luck I'll be bragging about this at a meet someday.. and maybe upgrading to a mash tun and kettles ... :P

Killiand, brewing from what I hear is like baking a cake. Use the same ingredients and techniques for 10 times and get ten results.
I should have clarified with my bother in law attempt was with a ginger root beer. He served it to us before it was fully fermented in the bottles and it was like paint stripers. Afterwards he left the rest of the batch in the garden shed with the results of exploding bottles 6 months later.
Since then he has progressed onto ale and is enjoying his brew on his own. But then he is a northie and would drink anything off a dog's tail.
The only time that he visits us in Laois now is to restock in homebrew in Mountmellick.

That's what I 'm starting to find!! Although my better half has a saying when it comes to baking... Put the best ingredients in, and no matter what - it will turn out well in the end whatever it looks/tastes like! :P

Great setup down there, the chaps were sound out too!

PS (If history is anything to go by.... I must have some northie in me... !)

If any of you alcoholics like a lot of gas in yer brew I have about 20 of these Kilner type bottles up for grabs if you want them. The only drawback is they're in Wexford. :-)

It's just clearing at the moment and will hopefully be bottling next week :) indications at the moment are that it's going to be quite strong - the flavour has changed pretty significantly in the last 4 days!! will do a mix of fully clear (sieved) cider and some with the remnants of pulp! hopefully, it will at least be drinkable :D

So.... Some Final notes....!

we've made 3 different batches:

Clear: this was the nearly totally sediment free couple of inches at the top.

'Cloudy' and by cloudy I mean full of sedimenty bits and what not (but her good self really liked the full flavour sample!)

Mixed - which was the bucket stirred and what we've also done is siphoned 6 litres, and cooked it with cinnamon and some other bits (rum and spices) to make a mulled cider (currently steeping!)

The overall percentage in a bit dubious about - my original hydrometer reading was quite high - meaning the percentage is about 16%...

I know....! But The only flaw i could find with how I conducted my original reading was that it was quite pulpy at that stage which might have given an inaccurate reading... However I did a sieved reading vs a pulped reading later on and they read the same!

Possibly use apple juice to dilute the brew to lower the 16/: assuming you looking for about 6 /:

Martin, you're some man! I was only recalling the other day about your previous history of offering Planes trains and automobiles to get keys for someone that had broken down abroad! I'm not sure the smuggling market between Wexford and Meath is as fruitful as some other routes 😂 if that's ok with flipper dipper - I'd be only delighted to - and could sort something out with you :)
